Woman saves dog by punching bear in face…

JUNEAU, Alaska — Black bears in residential neighborhoods aren’t exactly unheard of in Juneau. While many people stay inside when bears are about, one local woman says she had a different instinct when she saw her dog was in trouble.

It started out as a typical evening for 22-year-old Brooke Collins. She let her dogs out as usual but this time, she said there was a black bear outside who took hold of her dachshund Fudge. She said she feared for her pet’s life and, in an instant, ran over and punched the bear right in the face to make it let go.

“It was all so fast. All I could think about was my dog was going to die,” said Collins.

“It was a stupid thing but I couldn’t help it,” she said. “I know you’re not supposed to do that but I didn’t want my dog to be killed.”

Thai Chicken Wrap

At the table, fill lettuce leaves with flavorful minced chicken, vegetables and pieces of torn herbs. Add a squeeze of lime or some peanut crunch, and roll it up.

Serve with some steamed brown rice on the side, and you have the perfect summer dinner.

Don’t forget to include the kids! Your kids can help tear the mint into little pieces, pinch the tips and tails off the green beans and wash the vegetables. And, of course, taste to make sure the chicken is just perfect!

Ingredients

1 tablespoon vegetable oil
2 cloves garlic, finely chopped
2 tablespoons grated fresh ginger or ½ tablespoon ground ginger
¼ cup water or stock
1 pound ground chicken
¼ cup chopped fresh mint leaves
2 tablespoons sliced shallots
1 tablespoon Asian chili sauce or to taste
1 sliced Thai chili pepper (very spicy, so optional)
¼ cup lime juice
2 teaspoons brown sugar
2-3 tablespoons Asian fish sauce
18 whole large lettuce leaves (about 3 lettuce heads)
½ pound young raw green beans, thinly sliced on the diagonal
2 cups bean sprouts
1 cucumber, cut into strips with your peeper or mandoline
1 large carrot, shredded
Fresh mint, cilantro and basil
Cut limes

Asian chili sauce:

½ cup chopped peanuts
¼ cup lime juice
¼ cup sugar
¼ cup Asian fish sauce
1 clove of garlic, minced

Instructions

For the chicken filling:

1 tablespoon vegetable oil

¼ cup water or stock
1 pound ground chicken
¼ cup chopped fresh mint leaves
2 tablespoons sliced shallots
1 tablespoon Asian chili sauce or to taste

¼ cup lime juice
2 teaspoons brown sugar
2-3 tablespoons Asian fish sauce

For the Wrappings and Toppings:
18 whole large lettuce leaves (about 3 lettuce heads)
½ pound young raw green beans, thinly sliced on the diagonal
2 cups bean sprouts
1 cucumber, cut into strips with your peeper or mandoline
1 large carrot, shredded
Fresh mint, cilantro and basil
Cut limes
Asian chili sauce

For the Dipping Sauce:
½ cup chopped peanuts
¼ cup lime juice
¼ cup sugar
¼ cup Asian fish sauce
1 clove of garlic, minced

Mix all the ingredients for the dipping sauce in a little bowl. Set aside.

In a medium nonstick pan, heat the vegetable oil and sauté the garlic and ginger over medium heat until light brown. Add ¼ cup water or stock, then add the chicken and stir well, separating the chicken into small bits. This should take you about 4 to 5 minutes. Drain out the water.

Transfer the cooked chicken into a mixing bowl. Add the remaining ingredients for the filling and mix well. Taste the mixture and season until there is a good balance among the sweet, tart and savory flavors. You might need a bit more fish sauce, another squeeze of lemon, a little bit more hot sauce…

On a large platter, mound the vegetables, herbs, and chicken. Serve with little bowls of the dipping sauce, cut limes, fish sauce, chili sauce and chopped peanuts.

The system works by submerging the body in a solution of water and potassium hydroxide which is pressurised to 10 atmospheres and heated to 180C for between two-and-a-half and three hours.

Body tissue is dissolved and the liquid poured into the municipal water system. Mr Sullivan, a biochemist by training, says tests have proven the effluent is sterile and contains no DNA, and poses no environmental risk.

Ingredients

4 split chicken breasts [skinless are fine]
Lemon Pepper seasoning, to taste
1 14-oz can fire-roasted tomatoes with juice
3/4 cup of your favorite pasta sauce
1/4 cup balsamic vinegar
1/2 cup red wine
6 cloves garlic, chopped
2 cups of thin pepper strips- mixed green, yellow and orange peppers
2 large Portobello mushrooms, sliced
10 to 12 grape or cherry tomatoes, halved
1/2 cup chopped black olives
2 heaping tablespoons capers
1/2 cup golden raisins
1 tablespoon dried basil
1 teaspoon dried oregano or marjoram

Instructions

Preheat the oven to 350 degrees F.

Lightly oil a 10×13-inch baking pan with olive oil.

Wash the chicken in cold water and pat dry; season with lemon pepper; place in the baking dish.

In a mixing bowl, combine the remaining ingredients and pour over the chicken breasts.

Loosely cover with foil and bake until the chicken is no longer pink inside, anywhere from 30 to 45 minutes depending upon the size of the chicken breasts, etc.

Serve with brown rice, quinoa or mashed potatoes. Offer crumbled feta or goat cheese as a garnish.

Over the past few weeks, members of the Congressional Black Caucus (an organization that excludes people from joining based on skin color) held job fair town hall events across the country. Rep. Andre Carson (D-IN) told the attendees of his event that members of the Tea Party in congress would like to see “us hanging on a tree”. Carson is the congressman who started the myth that Tea Party protesters hurled racial slurs at he and Rep. John Lewis (D-GA) on the day of the ObamaCare vote.
