Beef & Potato Salad With Smoky Chipotle

In central Mexico, this salad is a standard—served as an appetizer, main dish or taco filling. Serve it with lime wedges, warm tortillas or tortilla chips. (Recipe from Fiesta at Rick’s by Rick Bayless; W.W. Norton and Company, July 2010.)

 Ingredients

Prep: 25 | Total Time: 85
  • 12 ounces stew beef, preferably from the chuck; cut into 1-inch cubes
  • 2  cloves garlic, chopped
  • 3 medium boiling potatoes, peeled and cut into roughly 1/2-inch pieces
  • 3 tablespoons cider vinegar
  • 1 small red onion, cut into 1/4-inch pieces
  • 3 tablespoons extra-virgin olive oil
  • 2-3 tablespoons chipotle chile in adobo sauce, finely chopped canned
  • 1 teaspoonsalt
  • 1 medium avocado, ripe, cut into 1/4-inch pieces
 Instructions
  1. Bring 1 quart water to a boil in a medium saucepan. Add beef, garlic and salt. When the water returns to a boil, reduce the heat to medium-low. Skim off the foam that rises during the first few minutes of simmering. Partially cover and simmer until the meat is fall-apart tender, about 1 hour. Remove the meat to a plate with a slotted spoon; let cool.
  2. Add potatoes to the meat broth (if there isn’t enough to cover them, add water) and simmer over medium heat until tender, 13 to 15 minutes. Scoop the potatoes into a medium bowl with a slotted spoon. Sprinkle with vinegar.
  3. Coarsely shred the beef and stir it into the potatoes, along with onion, oil and chipotle to taste. Let cool to room temperature. Stir in avocado just before serving.

Dragon splashed down in the Pacific Ocean on Thursday, May 31, 2012, at 11:42 a.m. EDT a few hundred miles west of Baja California, Mexico, marking a successful end to the first mission by a commercial company to resupply the International Space Station.

2 Boys, 1 Woman Killed as Human Sacrifices to ‘Saint Death’ in Mexico 


Eight people have been arrested in for allegedly killing two boys and one woman as human sacrifices for La Santa Muerte — the saint of death — in Northern Mexico, authorities said.

The boys, both 10, and woman, 55, were killed and their blood poured around an altar to the saint in a cult ritual, Jose Larrinaga, spokesman for Sonora state prosecutors told the Associated Press.

According to the AP, there had previously been no confirmed cases of human sacrifices to the saint in Mexico. “Saint Death,” depicted as a skeleton dressed in a long robe and carrying a scythe, has in recent years become a favorite among criminals and drug traffickers in Mexico, though is not recognized by the Roman Catholic Church.

New Allegations of Cover-Up In ATF Scandal

Just hours after the death of Border Patrol agent Brian Terry, federal officials tried to cover up evidence that the gun that killed Terry, was one the government intentionally helped sell to the Mexican cartels in a weapons trafficking program known as Operation Fast and Furious.

The revelation comes just days after a huge shake-up of government officials who oversaw the failed anti-gun trafficking program and Congress renewed its demand for more answers.

Also late Thursday, Senator Charles Grassley’s office revealed that 21 more Fast and Furious guns have now showed up at violent crime scenes in Mexico. That is up from 11 the agency admitted just last month.

“What we’re still waiting for are the answers to the other questions the Attorney General failed to answer per our agreement. The cooperation of the Attorney General and his staff is needed if we’re ever going to get to the bottom of this disastrous policy and help the ATF and the department move forward.”

Mexico, Others Criticize New Ala. Immigration Law

In an effort to ensure their citizens are treated fairly in Alabama, 16 nations, including Mexico, filed briefs against the state’s controversial new immigration law that has already drawn fire from the U.S. Department of Justice.

Edward Still, a Birmingham attorney who filed the brief, told The Montgomery Advertiser that the nations “want to have one immigration law and not 50  56 or 57.”
